
A few years ago when we lived in Hoboken, Doug and I would go on date nights to a local Mexican restaurant near our apartment. They had, what I considered to be the best guacamole! Churritos in Hoboken was the restaurant, and if you are local, I highly recommend it. They bring all of the fresh ingredients to your table and make your guac tableside.
At the time, we were newly engaged and getting ready to be married. While creating our wedding registry, I stumbled upon a molcajete that reminded me of the one they used at Churritos and the delicious gauc from our date nights out together! This began my journey with the goal of making the most delicious and fresh homemade guacamole possible. For those who are not familiar, a molcajete is a large Mexican version of the mortar and pestle. To me the molcajete is an absolute game changer in the guac making process.

I decided to try my best to recreate the delicious guac at home, and over the years have continued to tweak and change my recipe in the pursuit of perfection! This is where we are at now, and I consider it to be pretty dang delicious. As you may have noticed from my The All You Need – Everything Egg, Avocado, and Tomato Sandwich recipe I am a big fan of avocados. Throw them in with your breakfast lunch and dinner for an added boost of vitamin C and potassium. Guacamole offers you heart healthy fats, fiber, and potassium which can help regulate blood pressure. This recipe includes healthy ingredients you can find at your local grocery store.
Ingredients:
- 2 whole avocados
- 1/2 cup minced white onion
- 1 tablespoon minced fresh cilantro
- 2 de-seeded chopped jalapeños
- 1/4 cup diced tomatoes
- 1/4 teaspoon Salt
- 1 tablespoon of lime juice or the juice of one half of a lime
Instructions:
- Begin by dicing onion, jalapeños, tomatoes, and cilantro
- Add salt, half of the onion, half of the jalapeños, half of the cilantro, and lime to your molcajete
- Use the pestle to blend together the ingredients
- Add avocados and begin to mix together
- Add the remaining onions, jalapeños, cilantro, and lime while continuing to blend it all together
- Stir in the diced tomatoes
- Serve with chips, on top of a burger or pizza, on your toast, or with veggies.
