This is by far my favorite breakfast, aside from pancakes and Belgian waffles of course. However, this is definitely a healthier option. I started eating this sandwich during my second pregnancy in order to work avocados into my diet given they are a great source of many nutrients. Specifically, avocados are rich in vitamin C, folate, and magnesium. The need for folate is especially important during pregnancy due to the nutrient’s role in fetal development. Fun fact, did you know avocados contain more potassium than bananas?
Now, when I say I began eating this sandwich, I mean I ate it every single day because its so delicious. Now over 3 years later, this is still my go to breakfast or brunch sandwich! Follow the easy steps below and let me know how you like it!
Ingredients:
- Two slices of bread ( I use whole wheat) but whatever you prefer
- Avocado (I love the Trader Joes Teeny Tiny Avocados- one of these is the perfect amount for 1 sandwich. If you use a regular sized avocado 1 half is sufficient).
- Grape Tomatoes halved
- Everything Bagel Seasoning (local grocery stores typically carry this seasoning mix, I linked one you can have shipped to you at the bottom of this article.) If you do not have the seasoning I have used salt, pepper, and garlic powder as a substitute and it tastes great!
- 1 egg
Instructions:
- Start by toasting both slices of bread
- While the bread is toasting, I add coconut oil to a small frying pan.
- Melt the coconut oil and add one egg, frying on both sides
- While the egg is cooking I slice and add the avocado to my toast. I like to slice the avocado into 2 halves and then use a knife to slice each half into smaller sections. I then use a teaspoon to scoop out the avocado and a fork to mash it into the toast, evenly spreading on each piece of toast.
- Sprinkle your Everything But the Bagel Seasoning on one piece of your toast
- Add your halved tomatoes to one slice of toast- I like to cover the entire piece. I have used regular full size tomato slices and for some reason, its just not the same. Grape tomatoes for the win!
- Add your fried egg to your sandwich and top it off with your remaining slice of toast.
- Time to eat and enjoy every single bite!
