
Happy National Pancake Day!! Today we are talking pancakes, even better than pancakes are protein pancakes. Add in some food coloring and boom- Rainbow galaxy pancakes your kids will love. I was trying to get more protein in my little ones diet when I discovered Kodiak cakes. Made from whole grains and a great source of fiber and protein. Kodiak Cakes include 14 grams of protein in one serving and you can increase it to 18 grams of protein by replacing water with milk. You can increase your protein even more to 21 grams of protein per serving by using milk and adding an egg. I use a similar technique to the one I used in the Bright and Beautiful Unicorn Cotton Candy Cake. You can find Kodiak Cakes at your local grocery store or Target in the pancake section, we get a big box which includes 3 pouches at Costco. More bang for your buck!

Start by mixing up the pancake batter by following the instructions on the box. Next add a few drops of food coloring to the pancake mix and slowly stir. Be sure not to over mix as you will get a not so pretty color. Once your pancake batter is mixed you will pour it onto a hot pan or griddle and cook until you see small bubbles form and pop. Once the bubble pops flip the pancake and cook the second side. Remove from the pan add your favorite pancake toppings on top and enjoy!!
