While I am no chef, I am a mother of two who loves an easy meal I can throw into the Crock-Pot in the morning and forget about it. We eat this meal once a week and my girls love it. I originally found a recipe on Pinterest but have since made it this way and it has been a hit. Eat it with chips or tortillas, throw on some avocado or sour cream if you want to get crazy but it’s quite good by itself.
I have made this meal with both a jar of salsa and a can of enchilada sauce and prefer the salsa recipe over the enchilada sauce as I think it has more flavor, but you be the judge.

Ingredients:
- 2-3 Chicken Breasts
- 1 16oz. jar of salsa OR 1 can of enchilada sauce
- One can of corn
- One can of beans
- Mexican blend cheese
Instructions:
- Place chicken breasts in Crock-Pot and cover with either a jar of salsa OR a can of enchilada sauce
- Cook on low 6-8 hours or on high for 4 hours
- After the chicken is cooked, use two forks to shred the chicken.
- Add 1 can of corn and 1 can of black beans
- Mix the chicken, corn, and beans together
- Cover the mixture with a layer of cheese and continue to cook for 30 mins to 1 hour
- Serve and enjoy
