My daughter Sienna was dreaming of a unicorn colored cotton candy cake for her birthday. Not wanting to let her down or spend money on a cake I decided to do my best to make her dream come true. I successfully created her magical unicorn cotton candy cake at home on my own. With only two trips to the grocery store (it helps to make a list!) I had all of the ingredients I needed to make her cake. Many thanks to you Betty Crocker. Did you know you can use a Pyrex dish as a cake pan? I realized as I was preparing the mix for the cake that the cake pan I had was too wide for what I was trying to create. Under pressure with only hours to go before the party I had to improvise and decided to try using a Pyrex dish instead. Worked perfectly! Follow the list of ingredients and steps below to make a magical unicorn cake of your own!

Baking Instructions:
- Start by following the instructions on the Betty Crocker cake mix to make the cake batter. You will combine the cake mix, water, oil, and eggs. I used 3 whole eggs instead of egg whites but egg whites would work also.
- Next use the Wilton food coloring or food coloring of your choice to make different color dots throughout your batter (I used pink, blue and purple).
- Then take your spatula and slowly mix the colors to make your rainbow unicorn cake batter- be sure you do not overmix as you will not get the beautiful colorful effect.
- Be sure to grease your pan or Pyrex dishware prior to pouring in the mix.
- Time to bake your cakes! I used Pyrex 7 cup storage bowls to make my cakes as I felt my 8 inch cake pan was too large for the look I was going for.
- Allow your cakes to cool for at least 15 minutes.
- Once the cake is cool use a bread knife to cut some cake off of the top so that you have a perfectly flat cake top.
- Next up- Icing!! I used pink and purple food coloring to make my white icing different colors- one or two drops should do the trick.
- Put the first layer of cake and ice the top, add the next layer and repeat until you have a 3 layer cake.
- Cover different areas of the cake with pink and purple icing before using an icing spatula to smooth out the icing, mixing and blending the colors creating a unique and beautiful exterior.
- An optional step- melt the Ghirardelli chocolate melts and add in some food coloring to make chocolate drips around the sides of the cake.
- Decorate the top and sides of your cake with sprinkles.
- Last but not least, top it off with your cotton candy!!
That is how you make a Simple & Sweet Unicorn Cotton Candy Cake!! Enjoy!
